A few factors do most of the work:

Model and demand. A handful of references hold value. Most do not. Which is which changes over time.

Condition and completeness. Box, papers, and service history matter. A watch with its full set is worth meaningfully more.

Timing. The same reference can be worth very different amounts depending on where the market is in its cycle.
